Chicken with tomatoes and spinach

Cooking has become a big part of my daily life here, since I don’t have my mom to do it. I’ve decided to start sharing some of my favorite recipes! Whether it’s a quick meal I whipped up between classes, a Portuguese dish I tried to recreate, or just something delicious I stumbled upon, I’ll be sharing the recipes that pass my taste test. Meaning, If it’s good I’ll share it.

This won’t be a fancy food blog with perfect photos and complicated techniques — just real, simple, and tasty meals that anyone can make. So, grab your apron, and let’s get cooking! The first recipe I loved is chicken and rice (or pasta) with cherry tomatoes and spinach.

Chicken and rice with tomatoes and spinach, recipe

Recipe

Ingredients:

  • chicken breasts (or thighs)
  • olive oil
  • butter
  • cherry tomatoes, halved
  • fresh spinach (a lot of it)
  • heavy or cooking cream
  • salt, pepper, and seasoning to taste
  • cooked rice or pasta, for serving
  • optional: Grated Parmesan cheese

Instructions:

  1. In a bowl, toss the chicken pieces with salt, pepper, and a drizzle of olive oil. Let it marinate for 10-15 minutes if you have time.
  2. In a large skillet, heat butter over medium-high heat. Add the chicken and cook until golden brown on all sides and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of butter. Let it melt, then add the halved cherry tomatoes.
  4. Toss in the fresh spinach and stir until it wilts down. This should take about 5 minutes.
  5. Pour in the heavy cream and stir everything together. Let it simmer for 5 minutes on low heat, allowing the flavors to meld. Return the cooked chicken to the skillet.
  6. Taste and adjust seasoning with salt and pepper. If desired, sprinkle grated Parmesan cheese on top. Serve hot over cooked rice or pasta.
