Cooking has become a big part of my daily life here, since I don’t have my mom to do it. I’ve decided to start sharing some of my favorite recipes! Whether it’s a quick meal I whipped up between classes, a Portuguese dish I tried to recreate, or just something delicious I stumbled upon, I’ll be sharing the recipes that pass my taste test. Meaning, If it’s good I’ll share it.
This won’t be a fancy food blog with perfect photos and complicated techniques — just real, simple, and tasty meals that anyone can make. So, grab your apron, and let’s get cooking! The first recipe I loved is chicken and rice (or pasta) with cherry tomatoes and spinach.

Recipe
Ingredients:
- chicken breasts (or thighs)
- olive oil
- butter
- cherry tomatoes, halved
- fresh spinach (a lot of it)
- heavy or cooking cream
- salt, pepper, and seasoning to taste
- cooked rice or pasta, for serving
- optional: Grated Parmesan cheese
Instructions:
- In a bowl, toss the chicken pieces with salt, pepper, and a drizzle of olive oil. Let it marinate for 10-15 minutes if you have time.
- In a large skillet, heat butter over medium-high heat. Add the chicken and cook until golden brown on all sides and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of butter. Let it melt, then add the halved cherry tomatoes.
- Toss in the fresh spinach and stir until it wilts down. This should take about 5 minutes.
- Pour in the heavy cream and stir everything together. Let it simmer for 5 minutes on low heat, allowing the flavors to meld. Return the cooked chicken to the skillet.
- Taste and adjust seasoning with salt and pepper. If desired, sprinkle grated Parmesan cheese on top. Serve hot over cooked rice or pasta.
